Amanda’s Recipe for Fall Comfort Food Paradise!
Oooh once again it is that crisp time of year. The weather gets cooler, football revs up, and fall foods make their debut. We spend all summer grilling and eating light so by the time the cold comes around we are more than ready for some good ol’ homemade comfort foods.
We avoid breakfast for most of the spring and summer, but as soon as the weather changes so do our appetites. All of the sudden, pancakes and oatmeal start to sound pretty darn delicious and if you are like me and have our heavenly huckleberry pancakes and outstanding oatmeal at your fingertips, you would understand how awesome fall breakfast can be! (Psst..don’t worry you can order it online!) There is nothing like starting your day on a belly full of plump, juicy huckleberries. In fact, I’m sure that there is a study that says huckleberries improve productivity at work and if there isn’t then there should be!
Honestly, I am not that interested in lunch so I am skipping straight to dinner. It turns out fall might as well be called casserole season. It is time for the cheesy lasagnas, gooey macaroni and cheeses, savory chilis, applewood-smoked meats, and anything slow-cooked in a crock pot to come onto the scene. One of my favorites is pot roast or pork roast cooked in the crock pot allllll day so that when you get home your whole house greets you with an intoxicating scent that makes your mouth water. The meat is so tender it literally falls apart. Well, this is the most simple and wonderful roast recipe I have ever found and I would never lead you astray.
So Simple Roast
A beef or pork roast of your choice and size
1 packet Ranch dressing mix
1 packet Italian dressing mix
1 packet brown gravy mix
1 C. water
4 red potatos quartered
1 yellow onion
5 carrots cut in thirds or half
Directions: Put the roast and all vegetables in a crock pot. Mix all three dressing packets together with the cup of water and pour over the roast. Cover and cook on high for 4 hours or (my favorite) cook on low for 8 hours.
If you are using pork you can make pulled pork sandwiches with the leftovers and beef enchiladas if you chose a beef roast! Yum!
Of course our carb journey doesn’t end there. Let’s wrap up the day with some delectable blackberry brownies fresh from the oven. To cool down, add some vanilla bean ice cream drizzled with tangy huckleberry topping. Our flavorful fall day must end with a mug of piping hot huckleberry cocoa or to change it up a bit some mouthwatering mooseberry tea. I hope you all enjoy! Stay toasty my friends!
